Black Rice Noodle Salad

Ingredients
- SALAD:
- 1 pack of black rice noodles @jolly_organics
- 1 cucumber
- 1 carrot
- 1 red radish
- ¼ red cabbage
- 1 tablespoon of Absolute Organic White Sesame Seeds
- Beans and alfalfa sprouts
- DRESSING:
- Half the juice of lime
- ½ teaspoon Ground ginger
- 2 tablespoons of Absolute Organic Peanut Butter
- Sprinkle chilli flakes
- 2 tablespoons of Absolute Organic Coconut Amino Sauce Vinaigrette
Instructions
- Prepare the rice noodles according to pack instructions. Strain and put aside in a bowl.
- Finely chop all the vegetables and place them in a large mixing bowl.

- In a small bowl, whisk together the lime, ground ginger, peanut butter, chilli flakes and amino sauce until a creamy mixture forms.
- Pour the sauce over the noodle salad and sprinkle white sesame seeds on top.
- Serve it cold or at room temperature with a wedge of lime, beans and alfalfa sprouts.
